Cowboy Caviar Salsa

Whether you’re hosting a party or joining one, we have some gourmet tailgate items for the fans who take football and food very seriously. 

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can white beans, rinsed and drained
  • 3 roma tomatoes, diced
  • 1 jalapeño, seeded and finely diced
  • 2 ears fresh corn, roasted and then cut off the cob
  • 1 avocado, chopped
  • 1 orange bell pepper, diced
  • 1 small red onion, finely diced
  • 1 bunch cilantro leaves, chopped
  • 1/3 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Preparation

  1. Place the beans, white beans, tomatoes, jalapeño, corn, avocado, bell pepper, onion, and cilantro in a large bowl. 
  2. In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, and salt and pepper.
  3. Pour the dressing over the bean mixture and toss gently to coat. Serve as a salad or with chips.
